The most important thing to do when eating out gluten-free is communicate. Be very open and, if necessary, demanding. Talk to your server, and if you don't feel comfortable, ask to speak to the manager or the chef. If you're still not comfortable, leave. Being polite and soft-spoken is an admirable goal, but not one that's worth risking your health to achieve.
